Day Two – Barrel Aged

The Keep – Volume V
As we continually engage in the processes of brewing beer for the specific intention of barrel aging, we are constantly searching for the perfect marriage of Barleywine and Barrel. As we taste through our collection of barrels, we periodically find a product that exemplifies what we collectively agree is the best representation of that perfect marriage. The Keep – Volume V is an English-style Barleywine aged in an Old Elk Wheated Bourbon Barrel for 19 months. The barrel adds a unique wood character that adds to the luxurious mouthfeel. Malt sweetness, vanillin, maple wood, demerara sugar & bourbon all supported by the 13% base beer and the natural wood tannins.

Infinite Odyssey – Voyage III
Our third voyage in the Infinite Odyssey installment, and a celebration of the very beginnings of our Barrel Aging program. Here we took 50% of Voyage II and aged it in a 4 year old Wild Turkey Bourbon Barrel for 12 months. The mature base fared well in the younger bourbon barrel, allowing the fresher elements of the wood and spirit to add a brighter spirit character and more concentrated vanillin component. Please join us and continue to travel into the future while carrying forward elements of the past.

All That Was Promised
This is an extension of our Barleywine collaboration, “Kenosis,” brewed with Corporate Ladder Brewing and aged for a total of 28 months in Oak Barrels. Kenosis aged for 20 months in Willet Rye and Apple Brandy barrels, then we transferred it for further maturation in freshly dumped Apple Brandy Barrels. After 8 months the base beer had mellowed and the Apple Brandy character reached a clear and pristine voice. We then introduced some Cacao Nibs from the Philippines to encourage the already chocolate-forward essence of the beer, plus we added vanilla beans from the Comoros to help accentuate the sweetness of the apple brandy barrel and elevate the body and cacao character. These additions are used to balance the essence of the barrel along & accentuate the mature malt character of the base beer, not to overpower what was promised to us, a well-crafted aged and purposeful Barleywine.

Eternal Majesty
This is the culmination of the same base beer aged in two different bourbon barrels for the same length of time. This Imperial Stout was brewed with select English malts, a variety of chocolate malts, and rye. For 20 months, those flavors were able to marry and majestically mellow resulting in a robust but gentle flavor. We chose a 6 year old Wild Turkey Bourbon Barrel and a 17 year old Austin Nichols Bourbon Barrel for this blend due to the varying age of the oak vessels. We found they awarded vastly different yet complimentary characteristics and flavor compounds. After blending together we joined old and new with some classic ingredients that would compliment both the younger wood of the younger barrel and help balance some wood tannins from the older barrel: coconut, almonds, & cacao nibs.
